Our citrus experience begins with a stroll among lemon trees that reveal our origins: how the project was born and why we chose organic and now regenerative farming. We discover the “Australian cousin,” the surprising citrus caviar, and from the top of the plantation, beneath centuries-old chestnut trees, we explain why Novales is a unique place to cultivate them. We visit the production area, where lemons are transformed into new products, and observe how the trees communicate within a living environment. We conclude with a tasting that brings together our flavors and those of other artisans from Cantabria.
