An organic cider bitter made from selected apples grown on our own organic orchards. The apples are pressed to obtain the first-run must (mosto flor), the sweetest fraction, which ferments for several months, leaving residual sugar. It is then filtered and lightly re-fermented to achieve gentle carbonation without consuming the remaining sugar. Finally, 13 botanicals are macerated to create the characteristic sweet-bitter profile of a true bíter.
